I didnt stand mine up as much or put as much parsley basil and thyme on top but it came out pretty good. Wife had seconds and kids ate a little as well after they already had dinner.

5lb wild pig shoulder. Rubbed and sat overnight in a bag. Smoked on Pecan pellets. Kind of a faster smoke than normal. Only 7-8 hours. 225° for 3-4 hours and ramped up to 275 and foiled and covered for the remaining. Not a lot of fat on this guy so I was worried it would be a little dry but actually held on to it’s juice really well.

I was reading how you cooked it fast and quick, and then I saw your first (pre-cooked) photo and thought that photo was from the finished pork roast- see blood on the plate-, and I almost threw-up thinking "damn that looks raw, I could never eat pork that rare."
Totally made my stomach turn summer salts.
The latter photos looked pretty edible, but the damage was already done. I had to post this reply since you got me going there. LMAO, jumped the gun with the pork roast review.

Going to place an order for a new pellet pooper this weekend very excited but will take 4-6 weeks to get here I believe.

I was looking at a Louisiana as a step up but figured a couple hundred more and I have one that will last me forever... now to sell my little Traeger Tailgater lol
I got mine. At costco so it will last me forever or I'll return it haha..
Plus it's a special model they have contract with costco so I cant find it anywhere else.

Intending on the ys480, will probably get the ys640 though. I bought a Murphy bed from Costco, returned it a year later after a move and it fell apart being reinstalled, I do love their return policy.
I'm not a pitmaster but I turn out some okay meat. I've had 2 Traegers, good machines, my current model is too small for anything more than 4 people. The Louisiana I looked at was near 1k, it's nice looking but mixed reports abound, I figure a couple bills more to get one built like a tank that will last me 10+ years is a better long term investment.
