My first thought wasent portobello when I saw that......
Looks like a henckel knife to me. Man would my wife KILL me if I did that with her kitchen knife!! HAHA
if I was you I really would wear a pair of those latex gloves when you do that. I got the worst infection in my finger from a cut I had on my finger while fragging.......leathers are kind toxic
