Very little cooking required :D

You'll need;

Make sure the fish doesn't smell fishy, or at most has VERY little fishy smell. A good place to get it is 99 ranch market on clairmont mesa blvd.

You MUST use good soy sauce, if it say 'hydrolized' anywhere on the bottle, don't use it. I cannot repeat this enough, if you use crappy artificial soy sauce, you will ruin your sushi.

With a very sharp knife, cut the fish against the grain to ensure maximum tenderness

And place it on a pre-chilled plate, a chilled plate will keep the sashimi cool longer, and cooled sashimi looks/tastes better.

options for presentation and/or side dishes:
1)grate dikon (japanese radish more or less. It's a big white root). Place a layer of dikon under the sashimi.

2)sliced lettuce- dunno why but my family (1st and 2nd gens) do this. I guess the bottom line was to keep it off the plate soaking in its own juice?

Other places to get the fish- Mitsuwa (1 block away on Mercury from the corner of Mercury & Balboa)
Nijia- North of Balboa on Convoy. Same plaza as Goldfish World.

My personal favorite- fresh caught tuna. Also amaebi (sweet shrimp) but you gotta be a little openminded to try that.

Point Loma Seafood is another great place to get extremely fresh sashimi grade fish. I know the owner and he gets alot of their fish fresh every morning. If they know that it will be eaten as sashimi, they won't steer you wrong. I love sashimi, but I have never been too much of a sushi fan. I can't deal with wasabi, so it kind of makes paying for sushi a little ridiculus. Thusly, I stick to sashimi platters.

WOW...Leave it to Stan to get me talking about sashimi at midnight on Christmas eve!:)

Dave- ya got directions or an address? I think I'll have to stop by there sometime. Also do they have a variety there or mostly just tuna?

Unless it's wild caught salmon, I wouldn't touch it. Farm raised salmon has a lot of bad stuff going on. It's much higher in mercury, almost always died orange, and is full of pesticides. Try wild salmon, it's twice the cost but twice as good.

Well good luck getting wild caught salmon, the fishery here has crashed and the season is canceled this year.

And I like the salmon I'm getting at 99 ranch market, it's farmed canadian king salmon, not that dyed atlantic farmed supermarkets sell.

Also better to get farmed than to deplete the fishery.
